BREAKFAST STUFFED WAFFLES
INGREDIENTS
• Olive oil
• 1/8 cup diced green bell pepper
• 1/8 cup diced red bell pepper
• 2 to 3 eggs, lightly beaten
• Salt & pepper to taste
• 1) 5 count can refrigerated biscuits
• 3 to 5 slices cheese of your choice
INSTRUCTIONS
1. Pre-heat your waffle iron (I used a mini dash)
2. Lightly brush oil on the top and bottom of the waffle iron
3. Heat olive oil in a skillet over medium high heat. Add the bell peppers in and cook, stirring occasionally, until tender.
4. Add eggs to the skillet and scramble until cooked. Season with salt & pepper to taste. Set aside.
5. Separate biscuits, cutting each biscuit in half lengthwise.
6. Place half a biscuit into the waffle iron. Top with a slice of cheese, egg mixture, and an additional biscuit half. Close waffle iron and cook until golden brown & crisp (around 3 to 4 minutes).
7. Take out of waffle iron and serve immediately.
SRIRACHA CHICKEN BUNDLES
INGREDIENTS
• Refrigerated biscuits
• Cooked chicken (shredded)
• Cream cheese (softened)
• Sriracha to taste
• Melted butter
• Garlic powder to taste
INSTRUCTIONS
1. Preheat oven to 425 degrees F (330 if using an air fryer) Spray a baking sheet with cooking spray and set aside.
2. In a bowl mix together the shredded chicken & the Sriracha sauce. In a separate bowl, combine the cream cheese & shredded cheese.
3. Remove biscuits from the can and spread each biscuit into rounds.
4. Put a spoonful of the cheese mixture in the center of the biscuit. Follow that with a spoonful of the chicken mixture. Bundle up the biscuit edges & pinch the dough together. Roll the dough in a ball in your hands and place on a baking sheet.
5. Brush the top of each bundle with melted butter and sprinkle with garlic powder.
6. Bake for 8 to 10 minutes or until golden brown.
NOTE: If cooking in an air fryer cook on 330 degrees for 10 to 12 minutes (if using Grands biscuits).
Mine took 10 minutes.
CINNAMON SUGAR BITES
INGREDIENTS
• Canned biscuits
• Granulated sugar
• Cinnamon
• 1 to 2 tbsp butter, melted
• Powdered sugar
• Milk
• Vanilla extract
INSTRUCTIONS
1. Preheat oven to 350 degrees F.
2. Place 1 to 2 tbsp of butter in a baking dish & melt in the pre-heating oven.
3. Cut biscuits into quarters. In a plastic bag, mix sugar & cinnamon. Add the biscuit pieces into the bag and shake until coated.
4. Place the coated biscuits in a single layer in the melted butter in the pan.
5. Bake for 15 minutes, or until golden brown.
6. While the bites are baking, mix powdered sugar, milk, and vanilla extract until smooth.
7. Once baked, cool for about 2 minutes and drizzle with the icing.
NOTE: I cooked mine in a small iron skillet in the air fryer on 330 degrees F for 5 minutes.
